Approach

If a control cannot survive a Saturday, it is reviewed, revised and repaired.

We do not drop a binder and leave. The work is to put numbers and standards into the week the team already lives — then keep them honest when volume, call-outs, and vendor noise show up.

  1. 01

    See the building clearly

We walk the operation — walk-in, invoices, menu, labor, and the conversations that actually drive decisions. The goal is a picture you can trust, not a stack of unused reports.

  2. 02

    Install the controls

Standards, costing, purchasing, and product choices get written into the way the week already runs. If a control cannot survive a Saturday, it is reviewed, revised and repaired.

  3. 03

    Align the team

Owners, chefs, and managers get the same numbers and the same language. Goals stop living in one person’s anxiety and start living on the line.

What we will not do

  • Install software you do not have staff to run.
  • Write a 40-page plan no one opens after week two.
  • Pretend a new menu fixes a purchasing problem.
  • Replace your chef. We work with the people you have.

What a first session covers

The current menu, a recent invoice set, how you currently cost, and where the week feels most fragile. You leave with a short written read: what is actually moving the P&L, and whether a longer engagement is worth it.
